ELK GROVE -- Enid Baldock had wanted to own her own business for years, but didn't have a passion.
Baldock says, 'Nothing sounded unique or interesting to me.'
Until a friend called her from a low- carb store in Southern California.
Baldock says, 'I knew right when she said that. I completely left my job a week later.'
She opened the Sacramento area's first low- carb store in July in Folsom. Then a store in Elk Grove followed a few weeks ago, and Roseville's next. Why the urgency? One year ago Enid Baldock weighed 240 pounds.
Baldock says, 'You don't realize you've gotten so big, but when you go to tie your shoes you have to take a deep breath and say, 'I'm going in' and you take a deep breath and you bend down and you tie 'em real fast and you come back up for air and you're like what's going on?'
Today Enid Baldock, free of carbs and 80 pounds lighter, says she's healthier, happier and has energy. What she doesn't have is a business plan that goes beyond 5 years.
She realizes she's banking on what some consider a trend -- an expensive one.
Low-carb lovers pay the price. Many of the main ingredients themselves are expensive, like almond flour. So, a box of macaroni and cheese can cost $5."
